Are you getting enough vitamin C in your diet? You might think you eat a healthy diet, but according to the National Health and Nutrition Exam Survey, a review found almost 7% of women and 10% of men are deficient in vitamin C. What signs should you look for that suggest you’re not getting enough vitamin C?

Not a bad list, although they are missing the number one sign of vitamin C deficiency

Another decent article.

Pharmacist Insights: Signs of Vitamin C Deficiency
https://www.pharmacytimes.com/view/pharmacist-insights-signs-of-vitamin-c-deficiency

Vitamin C is typically depleted between 4 and 12 weeks if intake stops.

Nobody is perfect. Vitamin C is "depleted" within 24 to 48 hours in we humans, thus Linus Pauling's adage not to stop vitamin C, even for a single day. The body is probably drained of all ascorbate in 4 to 12 weeks, leading to frank scurvy, unless you become ill, in which case the body can be almost instantly drained. Ref: Cathcart's TITRATING TO BOWEL TOLERANCE.

Vitamin C deficiency is typically linked to socioeconomic status and food access. The symptoms of vitamin C deficiency are frequently visible in individuals who develop scurvy. Symptoms such as a constellation of corkscrew hairs, perifollicular hemorrhage, and gingival bleeding are highly suggestive of severe vitamin C deficiency.

Again, one of Pauling's greatest contribution was the discovery that our country's biggest (#1 killer) is caused by a chronic, not acute, vitamin C deficiency.

another decent article...

Vitamins do the body good: How to eat enough C, D, E
https://www.wfmz.com/features/life-lessons/vitamins-do-the-body-good-how-to-eat-enough-c-d-e/article_2ef07d86-2d07-11ed-9914-afb9ddc0c558.html

46% of U.S. adults aren’t getting enough vitamin C. According to The Cleveland Clinic, 42% of people are vitamin D deficient, and 90% are not getting enough vitamin E.

Getting too little of these essential vitamins can be dangerous, even life-threatening.

And this the little discussed point. The vitamins were discovered because people die when they are missing from the diet. Usually small amounts keep you alive, but Pauling, after A Hoffer, became fascinated that very large amounts posed little harm, (unlike drugs, and even minerals) and sometimes these "mega" amounts created great benefits.
