The Fate of Vitamin C When Vegetables Are Boiled

Post by asker » Sun Nov 19, 2023 5:56 pm

Hello,

I'm trying to find an answer to this question but am having difficulty locating one.

When you boil vegetables is the vitamin C completely destroyed, or does it just leach out into the water? If it leaches into the water then it could be recovered by using it in something or drinking it?

Thank you.

We do know that vitamin C is the least stable vitamin, and that left in water, it degrades by 50% in four hours.

I would imagine that boiling the vitamin C degrades the vitamin even faster.
